Vego-licious Potato
Salad

Ingredients: (to feed 2 - multiply as
required)

4 medium sized potatoes
|

1 tin of cannellini beans
|
|
¼ spanish onion
|
|
oregano
|
|
fresh mint leaves
|
|
olive oil
|
|
cracked black pepper, salt
|
Method:

1.

Peel potatoes, dice (into bite size pieces) and steam until
cooked. Set aside to cool. Salt to taste after cooled.

Drain the beans and mix with the potatoes.
|
|

Finely dice the spanish onion and finely chop the mint leaves.
|
|
4.

Add olive oil and cracked black pepper to taste, toss to
combine all ingredients.
|
Serve: cold as a Summery
meal on its own (great for lunch!), as a side dish, or with other
salads.
