Vego-licious Potato Salad
a Vegetarian Action exclusive by Herbivorous Anonymous

Preparation time: approx ½ hour

Ingredients: (to feed 2 - multiply as required)

4 medium sized potatoes

1 tin of cannellini beans

¼ spanish onion

oregano

fresh mint leaves

olive oil

cracked black pepper, salt

Method:

1.

Peel potatoes, dice (into bite size pieces) and steam until cooked. Set aside to cool. Salt to taste after cooled.

2.

Drain the beans and mix with the potatoes.

3.

Finely dice the spanish onion and finely chop the mint leaves.

4.

Add olive oil and cracked black pepper to taste, toss to combine all ingredients.

Serve: cold as a Summery meal on its own (great for lunch!), as a side dish, or with other salads.
